What is the Paris PopUp? A gastronomic initiative imagined by Harry Cummins and while they worked at Frenchie Restaurant in Paris. The idea, born in December 2012 was inspired by one of Harry's travels to London where he attended a PopUp dinner. Back in Paris, they decided to launch a PopUp event inspired by their respective experience of Paris in the midst of the much talked-about \"bistronomy movement\". This movement has taken France by a storm. And it's not surprise: this culinary art is trendy, cheap and delicious! But what actually is bistronomy and where did it come from?

Born in the 90ies, bistronomy is all about enjoying quality ingredients and superb cooking in a warm friendly environment. The trend is to transform the restaurant scene as we know it into something different. Let's take a look at how bistronomy has popularized the luxury of fine-dining. It's easy: just replace the silverware and waiters with warmth and atmosphere. The recipes are 50 % gastro and 50% bistro. The base is bistro: sardine, mackerel, pork feet, but cooking is gastro: order, discipline and technique. At the end success arrives serving the best gastronomy at affordable prices, building a bridge between popular and haute-cuisine.

It was just time for Harry and Laura to open a restaurant in Paris but without sacrificing travels to get as more as possible inspirations.

Since January 2013, they have been traveling around the world and packed the Paris PopUp with them. So far, they have been generously welcomed in Montreal, New York, California, Kyoto, Quebec City, Fez, Barcelona and London tasting, sipping, smelling and being inspired along the way.

The creative process The PopUps are sometimes inspired by a wine region that Laura loves, sometimes a style of food that Harry enjoys cooking, and from there they create a tasting menu and select matching wines. The pair loves to bring the producers and the winemakers close to the clients that attend. That's why, on many occasions, they have hosted winemakers, sommeliers, or brewers so they could have that first hand interaction with guests.

As a host restaurant, what to expect? Paris PopUp is very respectful and take in great consideration the use of others' spaces. They appreciate that you are giving them a stage to play and they want to exchange and learn from each other.

As a guest, what to expect? Expect to eat creative food prepared by Harry who is passionate about local sourcing and about bringing a \"bistronomic\" approach to the cuisine. As well, the service is meant to be professional without being stuffy. A passion for wine resounds in all the events and Laura loves exchanging and talking about your wine inclinations as well.

Are you curious now? So…it’s time to tell you secret! From 26th November to 6th December 2015 Paris PopUp is guest at Villa Tiboldi, Canale. I don’t know what you think about it but I would really try to enjoy bistronomy (a combination of the two words, bistro and gastronomy). Villa Tiboldi offers us this possibility to have dinner in a different way, with regional and seasonal ingredients that are well cooked right in the middle of the Langhe. From my side a big thank to have organized this event! As we are in the region of the “White truffles of Alba” you can choose to add this precious ingredient to your dish. But I don't want to reveal everything! Shall we meet there?
And…something more: right for this occasion the Villa is going to dress its Christmas clothes!
