We are talking about of one of my great grandmother’s famous receipt. It’s very easy to prepare and really good! Don’t be afraid of the cognac – the oven make evaporate all the alcohol. Ingredients: 250 gr. butter 375 gr. sugar 6 eggs 2 spoons of cacao the juice of a lemon 1/8 lt. of cognac 250 gr. hazelnut powder 250 gr. flour 1 yeast Step 1: put the yolks in a bowl and the white parts of your eggs in other bowl where you have to bit them until stiff, they have to reach the right consistence (if you turn the bowl upside down, the white shouldn’t move).
Step 2: warm up the butter very slowly at low fire and mix the sugar with the yolks until they get white and soft.
Step 3: weigh the flour and mix it with yeast; weigh your hazelnut and mix everything together.
Step 4: add the cognac right now and then the lemon juice. Mix again.
Step 5: add the cacao and the worked white eggs, mix well and put everything in a ring-shaped cake pan that you have previously greased.
Step 6: put the cake in the oven at 160 degrees for about one hour. Take your cake out of the oven, let it get cold and finish with a covering of dark chocolate that you have warmed up and you can spread using a paint brush.
Enjoy this special cake!
